Carnival Cruise Line has begun rolling out its new dining room menus across its fleet today, starting with the Carnival Conquest, after a successful debut on the Carnival Dream.

A selection of Emeril Selects, personally recommended by Emeril Lagasse, is included on the new menus curated by Chief Culinary Officer Emeril Lagasse in collaboration with Carnival chefs.

We focus on bringing new dishes to the dining room, adding international flavors and complementing carnival classics our guests love, Lagasse explained.

Over 60 new dishes were recently tested and selected for rotation in Carnival’s dining rooms by our skilled team of chefs. These dishes were very well received by Carnival Dream guests, so I am very excited that we will be bringing them to Carnival’s fleet.”

A new menu will be introduced on the Carnival Conquest in Miami, followed by the Carnival Horizon, followed by four more ships next month, including the Carnival Sunrise, Carnival Vista, Carnival Radiance, and Carnival Mardi Gras. The new menu items will be available on Carnival’s Australian-based ships later next year.

The new menu features items such as:

• Hawaiian Shrimp Poke
• Roasted Duck Rolls
• Pappardelle with Braised Lamb
• Grilled Swordfish
• Cornish Game Hen
• Salad Entrees
• Desserts

There are a variety of dishes on the “Emeri Select” menu, including Crab and Shrimp Cake; Beef Carpaccio; Coffee Glazed Roast Duck; and BBQ Salmon.
